Ingredients – Makes about 20 cookies

190g of Plain or All-Purpose Flour
5g Baking Powder
5g Bi-Carb/Baking Soda
Good pinch of salt
125 Coconut Oil, solid (Just place in into the freezer to harden)
75g Caster Sugar
125g Brown Sugar
1 Egg, room temperature
5ml Vanilla Extract
115g of Chocolate Chips

Bake for 10 minutes, or until edges are just starting to turn golden.

Let cool on cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.

    1. MsDessertJunkie I tried using olive oil. The cookies were way too greasy
      for my taste and more like shortbread cookies x

    2. PearWhiteMonkey thank you, you could give it a try, personally I never
      have. The oil you would need to use would need to be in a solid state in
      order to beat. Let me know how you go if you do happen to try it
